Baked Chicken


Ingredients:

3 chicken quarters, cut into drumsticks and thighs

1 large onion
6 cloves garlic
4oo gram can of whole peeled tomatoes, liquid drained
1 teaspoon dried thyme

1 tablespoon dried rosemary
1 tablespoon salt
1/2 teaspoon pepper
1 cup sherry

Method:

Preheat oven to 375 F.
Cut and chop the onion into small pieces, and peel and mash the garlic.
Squeeze the tomatoes into a bowl with your fingers
Add the chopped onion, garlic, thyme and rosemary to the bowl.
Add salt and pepper and mix the mixture thoroughly

Pour some olive oil in a pan and place over high heat.
Fry the chicken, skin-side down, until golden brown.
When the skin-side is brown then flip the chicken pieces.
Add the mixture .

Place in the oven and bake uncovered for 1 hour.
Pour the cup of sherry over the entire pan
and roast for an additional 30 minutes.
